The Ultimate Guide to Cooking the Perfect Steak

1. Choose the Right Cut

The right cut makes all the difference. Ribeye, filet mignon, and KC strip are family favorites because of their rich marbling and unbeatable tenderness. Whether it’s a backyard BBQ or a special occasion, these cuts never disappoint. If we're really wanting to dress up dinner - we'll even cook up some Tomahawks, T-Bones or Porterhouses. 

2. Let It Warm Up

We always let our steaks sit at room temperature for 30-45 minutes before cooking. This little step ensures consistent cooking and helps achieve that perfect sear.

3. Keep It Simple

A great steak doesn’t need fancy seasonings. We stick to kosher salt and black pepper to let the natural flavors shine. The key here is to use large-mesh salt and pepper, not the finely ground stuff you're probably used to seeing. We like whole peppercorns that we grind up one time ourselves. If we’re feeling extra, we’ll throw in some grass-fed butter, garlic, and fresh rosemary while cooking.

4. Sear It Right

  • Grilling (Our Preferred Method): Preheat to 450-500°F. Sear 3-4 minutes per side for a crispy crust, then move to indirect heat to finish.

  • Cast Iron: Heat a skillet until smoking hot, add oil, and sear 2-3 minutes per side. Add butter and baste for extra flavor.

5. Check for Doneness

A good steakhouse relies on a meat thermometer, and so do we:

  • Rare: 120-125°F

  • Medium Rare (Our Pick): 130-135°F

  • Medium: 140-145°F

6. Let It Rest & Slice

After cooking, patience is key. Let your steak rest for 5-10 minutes so the juices redistribute, keeping every bite juicy. Slice against the grain for the best texture.
